What Can I Make with Zucchinis?
 
 
I planted a late summer garden with tomatoes, basil, mint, cucumber, watermelon and zucchinis:

When I got the zucchini plants they came in a six-pack, so I just planted all of them. They're in a row in the back far right.
 
If you've planted zucchinis before, you probably know that six zucchini plants is a bit much. Usually all you need is two plants to feed a big family and your neighbors. 
 
As soon as mine come up, I figure I better know what to do with them. Zucchini Frappuccino, anyone?
 
Here are some ideas for cooking zucchinis that I've used in the past:
 
1. Slice zucchinis, toss with a little olive oil and salt and bake the slices on a baking sheet in the oven, removing them when they begin to brown.
 
2. Fry onions in a little olive oil, add sliced zucchinis and cook until just barely steamed. Then add tomato sauce and cook until heated.
 
3. Use lightly steamed grated zucchini in place of rice or pasta. You may want to use a food processor to do the grating if you're making a lot.
 
Using zucchinis instead of rice or pasta significantly reduces the carbs and calories in your meal while adding extra vitamins and fiber.
 
That's a good deal for your health!
